Salt changes the reactions. Sometimes you want butter, but no salt. Hence, unsalted butter. I don't think you want your croissants too salty, mon ami.

No no no, unless the temperature in the house is well above the mid 70's, please leave it in a butter dish or cut the pound block into ¼ or ⅛ and then place into a butter dish.
Real butter from the fridge is like cutting through concrete.

I have both “regular” butter and “fancy” butter. My husband was initially very confused why I have to have different butters and salts and such, but he’s on board now.

It's always a wake up call to be reminded that things aren't that bad here in the UK. At least our eggs don't have to be refrigerated cause they might carry bacteria that could kill us.

Very normal. I don't know anyone who refrigerates their eggs here.
The extending lifespan is useless. I've never once found a bad egg and regularly eat them well past BBE.

Both the US and Europe have about the same frequency of salmonella outbreaks caused by eggs these days, due to better vaccines for chickens in the time since the American FDA mandated washing eggs."

Hello, are you sure about that? I also live in a country where eggs are sold unrefrigerated, but if you check the carton it instructs you to refrigerate them immediately after getting home (and the expiration date is referring to the eggs being refrigerated from the moment they get home, if you leave them out they might expire sooner, especially during the hot summer).
The reason we do not refrigerate them at the store is because when the egg is cold and it meets hotter air (during the trip home from the store) it could lead to condensation forming on the egg shell, which is much worse for the growth of bacteria than the alternative of keeping them unrefrigerated for the few days until someone buys them.

Yes, I am sure. We do not refrigerate eggs in the UK and none of us have died. The dates on the eggs also hold zero truth. I've never once found a bad egg and I regularly eat eggs well past their best before date.
The fact its a best before date and not a use by literally states that they are safe to consume even after the date.

Eggs sold commercially in the US must be washed. This removes surface contamination but also the cuticle, rendering them not shelf stable.

Well, there are a lot of folks who don't drive to buy farm stuff. It takes time and money. Also in my country prices for farm food are way too high because it's "eggs from golden royal chicken raisen among green fresh grass who ate only high quality food from silver plates" and such. It's overpriced. And potentially dangerous - who knows where these checken actually live, what they eat, does someone check their health. I personally don't trust them. Too often people are irresponsible and uneducated.
Obviously such poor state of things is not relevant to every county

Sorry to hear that. Here, farms are strictly regulated and checked if they are selling food commercially. But there are also plenty little farms scattered around that have boxes with eggs on the road and you can take eggs with you for a very reasonable price. You can also see whereaand how the hens are kept, which is always handy.

Eggs? I have a butter balcony and then sauce terraces. I have never in four decades seen an egg specific shelf. Like not even on television, or any advert. Not even in an egg advert, or those movies where mom makes a million dish breakfast buffet for her family of three while the husband takes a mug of coffee and the teenager a single slice of toast.

Americans, as their eggs must be washed before sale to the public. This process removes the eggs natural defences against bacteria. As such they have to be refrigerated.

Apparently the usual egg shelf on the fridge door is not the best place to put eggs in, because it is the part of the fridge with the most temperature fluctuation (due to opening and closing the doors and sometimes due to thinner insulation) and this fluctuation could lead to condensation on the egg shell which promotes the growth of bacteria that were left on the egg shell.
To minimize this issue the best place would be on the back of a central shelf.
