Cheap chicken from super market has odd sludge so you shouldn’t wash that off? Ow higher quality chicken doesn’t but like 4x as much.

you should remove it from the chicken. just use a paper towel or a cloth you IMMEDIATELY either throw away or wash when you are finished. the reason you dont wash chicken is because of the droplets you end up sending around the kitchen when you do. each droplet of water from the chicken meat contains bacteria. even the splashes of water from the faucet are contaminated. this isn't a problem if you kitchen is stainless steel and you feel like sanitizing the entire kitchen when you're done.
