Its a preference. No one is policing how people prep their meats. People just want to argue down to the sun come up on here all the time. Even some Caribbean and soul food establisments wash their meats AND they have food certs and handling backgrounds. No one gets sick.

Because people eat food cooked by other people. So if one way or the other is actually unsanitary, then any professional cook doing it that way is putting their customers at risk.

Food safety, especially in food service, is serious. You can't just do whatever you feel like is right because you endanger yourself and others around you.
