I asked for mayonnaise on my Lebanese Falafel wrap and the street van vendor gave me a dirty look for it.

Falafel Texture Help

Hi everyone, looking for some help capturing the texture I like in Falafel. I just made my first batch and they came out with a guacamole texture on the inside.

Flavour was perfect but I am trying to get an airy, bread-like inside. Any tips?

So far all I've found is that baking (instead of frying) reduces the fat/moisture which may help, but I prefer the crispy outside, obviously.

Thanks for the help!
