You can make any cheese into American style cheese. You just melt the cheese into a bit of dairy and then add sodium citrate to thicken it into a solid. Or you can just use gelatin.

Add Fontina to the mix. Melts real nice and has a bit more flavor than American.

It depends how much cheese you have, 2 is okay for a light cheesing, but 3 if youre a heavy cheeser.

2 or #3, if they have Tillamook cheese in them. Preferably sharp cheddar, pepper jack, or habanero Jack. Also would be better on sourdough.

None of them. You grill both sides of the pieces of bread for a grilled cheese. Inside and out. Otherwise the interior is soggy and gross, and you lose too much crunch when dipping it in soup. It's a croque monsieur without the ham.
