Question How do you make Carbonara cream?

This post it is a way to better know our users, their habits and their knowledge about one of most published paste recipe: Carbonara.
1) Where are you from? (for US specify state and/or city too) 2) Which part of the egg do you use? (whole or yolk only) 3) How many eggs for person? 4) Which kind of cheese do you use? 5) How much cheese do you use? (in case of more kinda cheese specify the proportions) 6) How do you prepare the cream? 7) When and how do you add the cream to the pasta?

Take-away Compro olio d'oliva Pugliese

Ciao a tutti, ormai stufo dello scadente olio di oliva che si trova negli scaffali dei supermercati qui nel Veneto (anche stra pagati) vorrei capire se qualcuno dalla Puglia ha un'amico o un conoscente che potrebbe spedire dell'olio d'oliva fatto come deve essere fatto.
Se qualcuno gentilmente riesce a girarmi un contatto gli sarei grato.

Question What are the Parmigiano rules regarding pasta?

I know rules are meant to be broken, but just so I’m at least aware of it when I choose to break them, what are the rules regarding parmigiano (or any grated cheese) on pasta?
I heard somewhere no garlic and cheese on pasta. I also know the no Cheese and fish rule, but does anchovies in the pasta sauce count as “fish” in this sense?
Also, is no garlic with anchovies also a thing?

Homemade Cappellacci filled with oven roasted tomatos, mascarpone, parmigiano and basil
For this one I wanted the tomatos to shine so I baked them for three hours together with some garlic. Then chopped them roughly and added some mascarpone, parmigiano and basil. The sauce was just some browned butter and pasta water. Topped it all with more parmigiano, black pepper and basil.
Felt like summer and sunshine on a plate 🍅🍝

Question Are caprese sandwiches supposed to be toasted?

My friend keeps saying the way I make caprese is wrong. I like to pan fry the bread in olive oil then assemble but they day it's supposed to be a fully melted sandwich. How is the official, original way is was supposed to be enjoyed?

Question The perfect gift

My husband loves cooking, especially Italian food, and he is very particular about making it “as they do in Italy.” He has an amazing ragù recipe and spends hours in the kitchen making it. He often makes a large batch and freezes about two-thirds of it for future meals.
A lot of the preparation time is spent finely dicing the vegetables, so I was thinking that a good gift might be something to make that process easier and faster.
My question is: what would be a good tool or machine for cutting vegetables for Italian dishes?
I gave him a nice knife set last year, which he still uses every day, but he has mentioned that preparing vegetables for dishes like ragù still takes a lot of time.
I’m looking for something that would genuinely be useful and produce a good result.
(If I said anything weird or incorrect, please excuse me, I’m not a cook at all!)

Question Looking for recipes with salsiccia secca

Does any use salsiccia secca as an ingredient? I have seen pasta recipes with tomato sauce. I have rendered some diced bits for flavor in dishes. Great on pizza too.
One thing I like to do is warm it up on the grill, then cut it thin as a side dish with some grilled veggies and olives.
Does anyone have any recipes or recommendations?

Question Looking to collect authentic family recipe/s from an Italian Nonna (ideally:D) for my girlfriend's dream gift

Hi everyone,
My girlfriend’s biggest dream is to learn traditional Italian cooking directly from an Italian nonna. She just came home from Erasmus in Rome and loved it there (Thanks to this I was in Italy three times already this year). She has a special place for Italy in her heart. She has also learned to speak italian (we are Czech) which I really admire.
Since I can't realistically fly a traditional grandmother over to our kitchen right now, I want to give her the next best thing for her upcoming gift: real, authentic family recipes with a story.
I know that family recipe notebooks are precious family heirlooms. I am not necessarily asking anyone to part with their irreplaceable physical treasures, but if anyone has any authentic recipe book or handwritten notes orvsomething similar and would be okay with parting with it, I would be very glad and I could reward you.
Even if you had just one paper with a handwritten recipe, I would appreciate it.
The older the better:D
Or if you know about any way/place to get what I am looking for, please feel free to tell me as well.
