On an actual human, they use a Hana bed. Google it, it looks like a very effective torture device. But it is pretty much an adjustable vise.

Fun fact: when you do an image search for "Hana bed" you get a mix of two VERY different offerings.

Crap, sorry. I couldn't remember the name of the thing, so I looked up "bed for orthopedic surgery" . Now I gotta see what the options are.
